
Fresh, zesty, healthy, and light…this Californian Coastal inspired shrimp dish is really great eating for a hot summer day as a light dinner or lunch item! The smoked paprika gives the shrimp I nice added kick that compliments the wonderful char flavor you get from the BBQ.

I like to make this dish whenever you need some quick protein but don’t want something too heavy. Costco frozen shelled shrimp are an awesome time saver in this case….just place them in a bowl to thaw and make sure to pat the shrimp DRY before marinading. The key to good grilled shrimp is: 1) making sure the shrimp is dry so it can char on the grill and not become half-boiled and watery, and 2) do not overcook the shrimp otherwise you’ll have a strange mealy rubbery texture that’s not good.
For this dish, the zesty flavor comes from my honey Dijon and olive oil dressing that really helps brighten up the shrimp! You don’t need too much dressing, just enough to coat each little gem. Serve this with some nice grilled pita bread with a fresh salad on the side and you’re set to go! Give this super quick and easy seafood dish a try the next time you’re in a pinch for something healthy, light, and refreshing!
Smoked Paprika Grilled Shrimp

Ingredients
Marinade
- 1 lb large shrimp
- 2 garlic cloves minced
- 2 tsp smoked paprika
- 2 tbsp olive oil
- 1 tsp dried thyme
- 3 tsp salt
- 1 tsp black pepper
Dressing
- 1 green onion chopped
- 4 tbsp olive oil
- 1 tbsp honey
- 2 tsp Dijon mustard
- 1 tbsp apple cider vinegar
- 1 tsp salt
- 1 tsp black pepper
Instructions
- Remove shells from the shrimp and marinade for 15 min at room temperature.
- In a bowl, mix all dressing ingredients and set aside.
- Preheat grill to medium high heat and grill shrimp for about 2 min per side.
- Toss shrimp in the dressing while still hot and serve warm with some grilled veggies. Enjoy!
